Ingredients

Scale
  • 1 ยฝ cups warm water (about 110ยฐF)
  • 2 ยผ teaspoons active dry yeast (one packet)
  • 1 tablespoon brown sugar
  • 4 cups all-purpose flour (plus more for dusting)
  • 2 teaspoons salt
  • 4 tablespoons unsalted butter, melted
  • 1 large egg, beaten
  • Coarse sea salt or pretzel salt (for sprinkling)
  • 8 cups water (for baking soda bath)
  • โ…“ cup baking soda (for baking soda bath)
  • 2 tablespoons unsalted butter (for beer cheese dip)
  • 2 tablespoons all-purpose flour (for beer cheese dip)
  • 1 cup whole milk (or 2%)
  • ยฝ cup beer (lager or pale ale)
  • 2 cups sharp cheddar cheese, shredded
  • 1 teaspoon Dijon mustard
  • ยผ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In the bowl of a stand mixer (or large bowl), combine warm water, brown sugar, and yeast. Stir and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add flour, salt, and melted butter to the yeast mixture. Mix on low speed until a shaggy dough forms, then knead on medium for 5-7 minutes until smooth and elastic. If kneading by hand, knead for 8-10 minutes.
  3. First rise: Shape dough into a ball and place in a lightly greased bowl. Cover and let rise in a warm spot for about 1 hour, until doubled in size.
  4. Preheat and prep: About 15 minutes before dough is done rising, preheat oven to 425ยฐF. Line a baking sheet with parchment paper or a silicone mat.
  5. Shape the bites: Punch down dough and turn onto a floured surface. Divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces (about 40-50 total).
  6. Make the baking soda bath: In a large pot, bring 8 cups of water to a rolling boil. Carefully add baking soda (it will bubble vigorously), then reduce heat to a simmer.
  7. Bathe the bites: Working in batches of 8-10, drop bites into simmering baking soda water for 20-30 seconds until they float and puff slightly. Use a slotted spoon to transfer to prepared baking sheet, spacing 1 inch apart.
  8. Egg wash and salt: Brush each bite with beaten egg and sprinkle generously with coarse salt.
  9. Bake: Bake for 12-15 minutes until deep golden brown. Let cool on baking sheet for a few minutes.
  10. Make the beer cheese dip: While bites bake, melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in milk and beer, whisking continuously. Cook for 2-3 minutes until thickened. Reduce heat to low, add shredded cheddar, Dijon mustard, garlic powder, salt, and pepper. Stir until smooth and creamy. Keep warm until serving.

Notes

Don’t skip the baking soda bathโ€”it gives pretzels their signature chewy crust and deep brown color. Shred your own cheese for the dip to avoid anti-caking agents that prevent smooth melting. Keep the dip warm over low heat or in a small slow cooker. For best results, space bites 1 inch apart on the baking sheet to ensure even browning.
