Easy Hearty 3-Ingredient Slow Cooker Beef Stew

A simple, comforting slow cooker beef stew made with just three ingredients: beef stew meat, chunky salsa, and dry onion soup mix. Perfect for cozy dinners with minimal prep and maximum flavor.

  • 2 pounds beef stew meat (chuck roast cut into cubes)
  • 16 ounces chunky salsa (mild, medium, or hot)
  • 1 packet dry onion soup mix (about 1 ounce)

Instructions

  1. Trim any excess fat from the beef stew meat and cut into roughly 1-inch cubes if not already done.
  2. Place the beef cubes into the slow cooker pot. Pour the entire jar of chunky salsa over the beef, then sprinkle the dry onion soup mix evenly on top.
  3. Using a spoon, gently combine all ingredients so the beef is coated with salsa and soup mix.
  4. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  5. About 6 hours in, test a piece of beef for tenderness. If not tender, continue cooking and check every 30 minutes. If sauce is too thin, remove lid during the last 30 minutes to reduce liquid.
  6. Once cooked, give the stew a final gentle stir. Taste and adjust seasoning with salt and pepper if needed. Serve hot.

Notes

Use chuck roast or beef stew meat with some fat marbling for best tenderness. Resist stirring often to maintain heat. If sauce is too thin, remove lid during last 30 minutes to thicken. Adjust seasoning at the end as salsa and soup mix provide salt and spices. For gluten-free, check labels of soup mix and salsa. Can add vegetables like carrots, potatoes, or celery at start for extra nutrition.
