  • 4 tablespoons unsalted butter, softened (European-style butter recommended)
  • 2 garlic cloves, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Husk the corn and remove all silk threads. Rinse gently under cool water (about 5 minutes).
  2. In a small bowl, combine softened butter with minced garlic, chopped parsley, chopped chives, and lemon zest if using. Add a pinch of salt and a few grinds of black pepper. Mix well until evenly combined (about 3 minutes).
  3. Bring a large pot of water to a boil. Add the corn and boil for 7-10 minutes until tender but still crisp. Alternatively, steam the corn in a steamer basket over boiling water with a lid on for 10-12 minutes.
  4. Remove the corn with tongs and let it sit for a minute to drain excess water. Pat dry with a clean kitchen towel or paper towel.
  5. While the corn is still warm, generously spread the garlic herb butter over each ear, allowing it to melt and infuse the corn.
  6. Sprinkle extra salt and pepper if desired. Serve immediately.
