  • 2 tablespoons shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas (10-inch size)
  • 1 tablespoon unsalted butter or oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: cooked breakfast sausage or bacon bits
  • Optional: diced bell peppers or onions
  • Optional: salsa or hot sauce (for serving or adding inside)

Instructions

  1. Beat the eggs: In a medium bowl, crack 8 large eggs and whisk thoroughly until the mixture is uniform and slightly frothy—about 1 to 2 minutes. Season with ½ teaspoon salt and ¼ teaspoon black pepper.
  2. Cook the eggs: Heat 1 tablespoon unsalted butter in a nonstick skillet over medium-low heat. Pour in the eggs and let them sit for about 10 seconds without stirring. Then gently stir with a spatula, pushing the eggs from the edges to the center. Cook slowly for 3 to 4 minutes until eggs are just set but still moist. Remove from heat—don’t overcook.
  3. Prepare add-ins (optional): If using cooked sausage, bacon, or sautéed veggies, make sure they’re fully cooked and drained of excess grease. Chop into small pieces.
  4. Warm tortillas: Briefly warm each tortilla in a dry skillet or microwave (about 10 seconds) to make them pliable and easier to roll.
  5. Assemble burritos: Lay a warm tortilla flat. Spoon about ¼ cup (60 ml) cooked eggs onto the center. Sprinkle 2 tablespoons (15 g) shredded cheese over the eggs. Add optional fillings if using. Fold in the sides, then roll tightly from one end to the other to form a burrito.
  6. Wrap and freeze: Wrap each burrito tightly in aluminum foil or parchment paper. Place wrapped burritos in a freezer-safe bag or container, squeezing out excess air. Label with date.
  7. Reheat instructions: To eat, unwrap the burrito, wrap it in a damp paper towel, and microwave on high for 1 ½ to 2 minutes. Alternatively, reheat foil-wrapped burritos in a 350°F (175°C) oven for about 20 minutes.

Cook eggs low and slow to avoid rubberiness. Keep fillings dry to prevent sogginess. Warm tortillas before rolling to prevent cracking. Double wrap burritos if needed to avoid freezer burn.
