Easy Crockpot Salsa Chicken (3 Ingredients)

Tender, flavorful shredded chicken made with just three simple ingredients in a slow cooker. Perfect for busy weeknights, this set-it-and-forget-it recipe delivers delicious results with minimal effort.

  • 1.5 to 2 lbs boneless, skinless chicken breasts
  • 1 ½ cups your favorite salsa (thick, chunky variety recommended)
  • 1 packet (about 1 oz) taco seasoning

Instructions

  1. Trim any excess fat from the chicken breasts. If thick (over 1 inch), slice in half horizontally to create thinner cutlets. Place chicken in the bottom of the Crockpot in a single layer.
  2. Pour 1 ½ cups salsa evenly over the chicken. Spread with a spatula if desired.
  3. Sprinkle the entire packet of taco seasoning evenly over the salsa and chicken.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  5. Carefully remove the lid. Using two forks, shred the chicken directly in the slow cooker. Stir shredded chicken into the salsa sauce.
  6. Let sit in the sauce for 5 minutes before serving. Use a slotted spoon to serve if desired.

Notes

For a thicker sauce, leave the lid off for 10-15 minutes on warm setting after shredding. Use a thick salsa to avoid a watery result. Shred chicken while still warm for easiest results. Can be frozen for up to 3 months.
