  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 1 bag tortilla chips (like Tostitos Scoops)
  • Optional garnishes: chopped green onions, crumbled blue cheese, fresh cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Soften the cream cheese by letting it sit at room temperature for about 30 minutes, or microwave for 10-15 seconds.
  3. In a medium mixing bowl, combine the softened cream cheese, 1/2 cup ranch dressing, and 1/2 cup buffalo wing sauce. Stir until smooth and well combined.
  4. Fold in 1 cup of shredded chicken, 1/2 cup of the shredded cheddar cheese, and 1/2 cup of shredded mozzarella. Reserve the remaining 1/2 cup of cheddar for the top.
  5. Spoon the mixture into a greased 9×9 inch baking dish and spread into an even layer.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top.
  7. Bake for 20-25 minutes until hot and bubbly, and the cheese on top is melted and golden brown. Optionally, broil for 1-2 minutes for a browner top.
  8. Remove from the oven and let the dip rest for about 5 minutes before serving.
  9. Garnish with chopped green onions or crumbled blue cheese if desired, and serve with sturdy tortilla chips.

For best texture, ensure cream cheese is truly softened. Rotisserie chicken is a convenient option. For a lighter version, use reduced-fat cream cheese and Greek yogurt instead of ranch dressing. This dip can be assembled ahead of time and refrigerated; add 5-10 minutes to baking time if starting from cold. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
