  • 1.5 lbs (680 g) ground beef (can substitute ground turkey)
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 cup (150 g) frozen mixed vegetables (peas, carrots, corn; fresh can be used)
  • 2 cans (10.5 oz / 298 g each) condensed cream of mushroom soup (use gluten-free if needed)
  • 1 cup (240 ml) sour cream (can substitute Greek yogurt)
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (100 g) shredded mozzarella cheese
  • 1 tbsp (15 ml) Worcestershire sauce
  • Salt and black pepper to taste
  • 1 tbsp (15 ml) cooking oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tbsp cooking oil in a large skillet over medium-high heat. Add diced onion and sauté for 3-4 minutes until translucent.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add ground beef, breaking it apart with a spatula. Cook for 7-10 minutes until browned and no longer pink. Drain excess fat if necessary.
  5. Stir in frozen mixed vegetables and cook for 2-3 minutes to thaw.
  6. Add Worcestershire sauce, salt, and pepper to taste. Remove from heat.
  7. In a mixing bowl, combine condensed cream of mushroom soup, sour cream, 1 cup shredded cheddar cheese, and mozzarella cheese. Mix until smooth.
  8. Fold the beef and vegetable mixture into the creamy cheese sauce until evenly coated.
  9. Pour the mixture into a greased 9×13-inch baking dish and spread evenly.
  10. Top with frozen tater tots in a single layer, covering the entire surface.
  11. Bake uncovered for 35-40 minutes until tater tots are golden brown and filling is bubbly. Rotate the dish halfway through baking.
  12. Remove from oven and sprinkle the remaining 1 cup shredded cheddar cheese on top.
  13. Return to oven for an additional 5 minutes or until cheese melts.
  14. Let the casserole rest for 5-10 minutes before serving.
