These Easy Candy Corn Sugar Cookie Bars are a quick and delicious fall dessert made with a box of sugar cookie mix, butter, an egg, and candy corn. They come together in about 30 minutes and are perfect for Halloween parties, Thanksgiving, or any fall gathering.

  • 1 box (17.5 oz) sugar cookie mix
  • ½ cup unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups candy corn
  • Optional: ¼ teaspoon salt (if using unsalted butter)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving about 2 inches of overhang on the long sides. Lightly spray the parchment with non-stick cooking spray.
  2. Melt ½ cup unsalted butter in a microwave-safe bowl in 20-second intervals until completely melted. Let it cool for 2-3 minutes.
  3. In a mixing bowl, combine the melted butter, 1 large egg (room temperature), and 1 teaspoon vanilla extract. Whisk until smooth and slightly thickened.
  4. Pour the entire box of sugar cookie mix into the bowl. Stir with a wooden spoon or spatula until just combined. Do not overmix.
  5. Gently fold in 1½ cups of candy corn until evenly distributed. The dough will be thick and slightly sticky.
  6. Transfer the dough to the prepared pan. Wet your fingers slightly with cold water and press the dough evenly into the pan, making sure it’s an even layer.
  7. Bake for 18-22 minutes, until the edges are golden brown and the center looks set and slightly puffed. A toothpick inserted in the center should come out with a few moist crumbs.
  8. Cool the bars in the pan on a wire rack for at least 30 minutes. Then use the parchment overhang to lift the entire block out onto a cutting board. Let cool completely (another 20-30 minutes) before cutting.
  9. Cut into 24 squares (6 rows by 4 rows) using a sharp knife. Wipe the knife clean between cuts for neat edges.

Notes

Don’t overbake. Pull the bars out when the center looks just set and a toothpick comes out with moist crumbs. Room temperature egg matters. Press the dough evenly into the pan. Let the bars cool completely before cutting to avoid crumbling. Use parchment paper for easy removal. These bars taste even better the next day.
