This Easy Candy Corn Popcorn Bark is a no-bake Halloween treat that combines crispy popcorn, creamy white chocolate, and chewy candy corn for a sweet and salty snack that’s ready in just 15 minutes of active prep time.

Ingredients

Scale
  • 8 cups popped popcorn (about 1 standard bag of microwave popcorn or 1/3 cup unpopped kernels)
  • 12 ounces white chocolate chips or melting wafers
  • 1 cup candy corn
  • 1/2 cup salted peanuts (optional but highly recommended)
  • 1 tablespoon coconut oil or vegetable oil
  • 1/4 cup festive sprinkles or orange nonpareils (optional)

Instructions

  1. Pop your popcorn: If using microwave popcorn, pop one standard bag according to package directions. If air-popping, use about 1/3 cup of kernels. Remove any unpopped kernels and let cool for 1-2 minutes.
  2. Toss with oil: Transfer popcorn to a large microwave-safe bowl. Drizzle 1 tablespoon of coconut oil (or vegetable oil) over the popcorn and toss gently with your hands or a spatula to coat evenly.
  3. Melt the white chocolate: In a separate microwave-safe bowl, melt 12 ounces of white chocolate chips in 30-second intervals, stirring after each, until smooth and fully melted. Be careful not to overheat.
  4. Combine everything: Pour melted white chocolate over the oiled popcorn. Add 1 cup of candy corn and 1/2 cup of salted peanuts (if using). Fold gently until popcorn is evenly coated and mix-ins are distributed.
  5. Spread on baking sheet: Transfer mixture to a parchment-lined baking sheet. Spread into an even layer about 1/2 to 3/4 inch thick. If using sprinkles, add them now while chocolate is still wet.
  6. Chill until firm: Refrigerate for at least 1 hour, or until chocolate is completely set and firm to the touch. For a quicker option, freeze for 20-30 minutes.
  7. Break into pieces: Once firm, lift parchment paper off the baking sheet. Use your hands to break the bark into irregular pieces, roughly 2 to 3 inches each.

Notes

Tossing popcorn with a little coconut oil before adding chocolate prevents sogginess. White chocolate burns easily; microwave in 30-second bursts. Let melted chocolate cool for 30 seconds before adding candy corn to prevent seizing. Bark tastes even better on the second day. Store in an airtight container at room temperature for up to 1 week. Can be frozen for up to 3 months.
