  • 1 cup mini pretzel twists

Instructions

  1. Prep your baking sheet: Line a baking sheet with parchment paper or a silicone baking mat. Make sure the parchment extends slightly up the sides of the pan to catch any melted chocolate that might spread. Set this aside while you prepare the other ingredients.
  2. Arrange the pretzels: Spread the mini pretzel twists evenly across the prepared baking sheet. Don’t overlap them—you want each piece of bark to have a pretzel in it. If you’re using regular pretzels, break them into bite-sized pieces first. I like to leave a little space between each pretzel so the chocolate can flow around them.
  3. Melt the white chocolate: Place the white chocolate chips and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each interval. White chocolate burns easily, so don’t walk away. It usually takes about 1.5 to 2 minutes total. Stop when most of the chips are melted and stir until completely smooth. The residual heat will melt the remaining chips.
  4. Pour and spread: Pour the melted white chocolate over the arranged pretzels. Use your spatula to spread it evenly, making sure the chocolate flows around and between the pretzels. Don’t worry if some pretzels aren’t completely covered—the exposed bits add nice texture and crunch.
  5. Add the candy corn: While the chocolate is still wet, sprinkle the candy corn evenly over the surface. Press them gently into the chocolate so they stick. I like to arrange a few in little clusters for visual interest. Work quickly here—the chocolate starts setting fast.
  6. Finish with sea salt: Sprinkle a pinch of flaky sea salt over the entire bark. This little step makes a huge difference—it balances the sweetness and makes the flavors pop. Don’t skip it!
  7. Let it set: Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely firm and set. If you’re in a hurry, the freezer works too—just check it after 15 minutes. The bark should be firm to the touch and easily peel away from the parchment.
  8. Break into pieces: Once set, lift the parchment paper from the baking sheet and place the bark on a cutting board. Use your hands to break it into irregular pieces—this is part of the charm. Don’t use a knife unless you want perfectly straight edges, but honestly, the rustic look is better.

White chocolate can seize if it gets even a drop of water in it, so ensure all equipment is completely dry. If the chocolate starts to thicken while working, microwave for 10 seconds and stir. For sticky candy corn, toss with a tiny bit of powdered sugar before adding to prevent color bleeding. The bark keeps well for up to two weeks in an airtight container at room temperature, or freeze for up to three months.
