  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika (smoked or regular)
  • 1 teaspoon dried oregano (Mexican or Mediterranean)
  • 1 teaspoon salt (or to taste)
  • ยฝ teaspoon black pepper (or to taste)
  • 1 can (14.5 oz / 411g) diced tomatoes (fire-roasted preferred)
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 cup (150g) frozen corn (no need to thaw)
  • Juice of 1 lime
  • ยผ cup fresh cilantro, chopped

Instructions

  1. Prep your ingredients first: dice the onion, mince the garlic, drain and rinse the black beans, and measure out your spices.
  2. Heat the oil: Place a large skillet over medium-high heat and add the olive oil. Let it heat until shimmering, about 30 seconds.
  3. Cook the onion: Add the diced onion and cook, stirring occasionally, until translucent and softened, about 3-4 minutes.
  4. Add the garlic: Toss in the minced garlic and stir constantly for about 30 seconds until fragrant.
  5. Brown the turkey: Add the ground turkey to the skillet. Break it into crumbles with a wooden spoon. Let it sit undisturbed for 2 minutes to develop a brown crust, then stir and repeat. Cook until no longer pink and golden-brown bits appear, about 6-7 minutes.
  6. Bloom the spices: Sprinkle chili powder, cumin, paprika, oregano, salt, and pepper over the cooked turkey. Stir constantly for 1 minute until fragrant.
  7. Add the tomatoes: Pour in the diced tomatoes with their juices. Stir, scraping the bottom of the pan to release browned bits. Let simmer for 5 minutes, stirring occasionally.
  8. Add the beans and corn: Stir in the drained black beans and frozen corn. Let simmer for another 5 minutes. If too thick, add a splash of water or broth; if too thin, simmer a few extra minutes.
  9. Finish with lime and cilantro: Remove from heat. Squeeze lime juice over the top and sprinkle with fresh cilantro. Stir and adjust seasoning to taste.
  10. Serve immediately: Spoon into bowls or over lettuce. Set out toppings like tortilla chips, shredded cheese, sour cream, avocado, and hot sauce.
