  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour (can substitute almond flour for gluten-free option)
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 3/4 cup (180ml) heavy cream (or full-fat coconut milk for dairy-free)
  • 6 oz (170g) bittersweet or semisweet chocolate, chopped
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 kiwi, peeled and sliced thin
  • 1/2 cup raspberries
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease your 9-inch round pan and line with parchment paper for easy removal.
  2. In a large bowl, whisk together the melted butter and sugar until smooth and slightly glossy, about 2 minutes. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder. Slowly fold the dry ingredients into the wet mixture using a spatula. Combine until no streaks remain, do not overmix.
  4. Pour batter into the prepared pan and spread evenly with a spatula, smoothing the top.
  5. Bake for 20-25 minutes. Check at 20 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but not wet batter.
  6. Cool completely on a wire rack, about 1 hour.
  7. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer (do not boil). Remove from heat and pour over chopped chocolate in a heatproof bowl. Let sit for 2 minutes, then whisk gently until smooth and glossy.
  8. Spread ganache over the cooled brownie base evenly.
  9. Arrange sliced strawberries, blueberries, kiwi, and raspberries on top in a colorful pattern, starting from the center outward.
  10. Garnish with fresh mint leaves if desired.
  11. Chill for 15-20 minutes before slicing and serving to help the ganache firm up.

Avoid overmixing the brownie batter to keep it fudgy and dense. Heat cream gently for ganache to prevent seizing. Cool brownie completely before spreading ganache to avoid melting. Use fresh, dry fruit and add just before serving to prevent sogginess. Use a serrated knife dipped in hot water for clean slices.
