A hearty, smoky, and creamy one-pot soup featuring caramelized kielbasa and white beans in a rich broth. Perfect for entertaining, this comforting recipe is easy to make and even better the next day.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced (about 1.5 cups)
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 pound kielbasa sausage, sliced into 1/2-inch rounds
  • 3 cans (15 ounces each) cannellini or great northern beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 bay leaf
  • Fresh parsley, chopped (about 1/4 cup)
  • Grated Parmesan cheese (optional)
  • Crusty bread or garlic bread for dipping

Instructions

  1. Brown the kielbasa (8-10 minutes). Heat the olive oil in your Dutch oven over medium-high heat. Add the sliced kielbasa in a single layerโ€”don’t crowd the pot. Let it cook undisturbed for 3-4 minutes until the bottoms are deeply browned. Flip and cook another 3-4 minutes. Transfer to a plate with a slotted spoon. The fond on the bottom of the pot is liquid goldโ€”don’t clean it out!
  2. Sautรฉ the vegetables (5-7 minutes). Reduce heat to medium. Add the onion, carrots, and celery to the pot. Cook, stirring occasionally, until the onions are translucent and the vegetables start to soften. Scrape up any browned bits from the bottom. Add the garlic, smoked paprika, thyme, and red pepper flakes. Cook 1 minute until fragrant.
  3. Mash and add the beans (2 minutes). Take about one-third of the drained beans and mash them with a fork or potato masher right in a bowl. This is my secret for that creamy texture without cream. Add all the beans (mashed and whole) to the pot and stir to combine.
  4. Build the broth (1 minute). Pour in the chicken broth and add the bay leaf. Stir everything together, making sure to scrape up any remaining browned bits from the bottom. Bring to a gentle boil.
  5. Simmer the soup (15-20 minutes). Reduce heat to low, cover, and let it simmer. The soup should be gently bubbling, not boiling hard. This is when the flavors meld together and the beans start to break down slightly, thickening the broth.
  6. Add back the kielbasa (5 minutes). Return the browned kielbasa to the pot. Stir and let it simmer uncovered for 5 more minutes. This lets the sausage reheat and the flavors marry together.
  7. Season and serve. Remove the bay leaf. Taste and adjust salt and pepperโ€”remember the kielbasa and Parmesan will add saltiness. Ladle into bowls and top with fresh parsley and Parmesan.

Notes

Don’t skip browning the kielbasaโ€”it’s key for deep flavor. Use low-sodium broth and rinse canned beans to control salt. This soup tastes even better the next day. For a vegetarian version, use plant-based sausage and vegetable broth with a teaspoon of liquid smoke.
