Instructions

  1. Grate the zucchinis using a box grater into a large mixing bowl, yielding about 3 cups (350 grams) grated zucchini.
  2. Transfer grated zucchini into a clean kitchen towel or cheesecloth and squeeze firmly to remove excess moisture.
  3. In a separate bowl, mix Parmesan, flour, salt, and black pepper.
  4. Beat eggs in a small bowl, then add minced garlic and chopped herbs; stir gently.
  5. Add squeezed zucchini to dry ingredients, then pour in egg mixture and stir until combined. If too wet, add a little more flour.
  6. Heat a non-stick or cast iron skillet over medium heat and add olive oil; warm until shimmering.
  7. Scoop about 2 tablespoons (30 grams) of batter per fritter, flatten slightly, and place in hot oil with space between each.
