Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Wash and cut the potatoes into uniform 1-inch chunks. Toss the potatoes in a large bowl with the cornstarch until lightly coated.
  3. Add olive oil, minced garlic, salt, and black pepper to the potatoes. Toss thoroughly to coat every piece. Spread the potatoes out on the baking sheet in a single layer without crowding.
  4. Roast the potatoes in the oven for 25-30 minutes, turning halfway through, until golden and crispy on the edges with a tender inside.
