Ingredients

Scale
  • 2 pounds chicken wings, split into flats and drumettes
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 packet (1 ounce) dry ranch dressing mix
  • 1/2 teaspoon garlic salt
  • 1/2 cup ranch dressing
  • 2 tablespoons sour cream
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper and place a wire rack on top.
  2. Rinse chicken wings and pat them extremely dry with paper towels to ensure crispiness.
  3. In a large bowl, whisk together flour, garlic powder, onion powder, salt, and black pepper.
  4. Toss the dried wings in the flour mixture until lightly coated, shaking off excess flour.
  5. Arrange wings in a single layer on the wire rack, ensuring they are not crowded.
  6. Bake for 25 minutes until golden brown and firm.
  7. While wings bake, combine parmesan cheese, Italian seasoning, dry ranch dressing mix, and garlic salt in a small bowl.
  8. Remove wings from oven, sprinkle the parmesan mixture over the top, and press gently to adhere. Return to oven for 10 minutes.
  9. In a large bowl, whisk together ranch dressing, sour cream, lemon juice, and chopped parsley.
  10. Remove wings from oven and let cool for 2 minutes. Transfer to the bowl with ranch sauce and toss gently to coat.
  11. Serve immediately while hot and crispy.

Notes

Pat wings dry thoroughly to prevent steaming. Use a wire rack to allow air circulation for even crisping. Do not overcrowd the pan. For a spicy kick, add cayenne pepper to the flour mixture. Reheat leftovers in the oven at 375°F to maintain crispiness; do not use a microwave.
