Ingredients

Scale
  • 2 pounds chicken wings, split into flats and drumettes, fresh or thawed
  • 4 cloves garlic, finely minced
  • ½ cup (50g) parmesan cheese, finely grated (Parmigiano-Reggiano recommended)
  • 4 tablespoons (57g) unsalted butter, melted
  • 1 tablespoon olive oil
  • Salt to taste (about 1 teaspoon)
  • Freshly ground black pepper to taste (about ½ teaspoon)
  • 1 teaspoon Italian seasoning
  • ½ cup (120ml) ranch dressing, homemade or store-bought
  • 2 tablespoons fresh parsley, chopped finely (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Arrange a wire rack on a rimmed baking sheet.
  2. Pat the chicken wings dry thoroughly with paper towels to remove moisture.
  3. In a large mixing bowl, toss the wings with olive oil, salt, pepper, and Italian seasoning until evenly coated.
  4. Arrange the wings in a single layer on the wire rack, skin side up, ensuring they are not crowded.
  5. Bake for 35 minutes, flipping the wings halfway through to ensure even browning and crispiness.
  6. While the wings bake, melt the butter gently in a small saucepan over low heat. Add minced garlic and cook for 1-2 minutes until fragrant but not browned.
  7. Remove the saucepan from heat and stir in the grated parmesan cheese to create the garlic parmesan sauce.
  8. When wings are done, transfer them immediately back to the large bowl and pour the warm garlic parmesan butter over them. Toss carefully to coat every wing.
  9. Plate the wings and drizzle with creamy ranch dressing or serve ranch on the side for dipping.
  10. Garnish with chopped fresh parsley if desired and serve immediately.

Notes

Pat wings dry thoroughly to ensure crispiness. Use a wire rack to allow air circulation and avoid soggy skin. Flip wings halfway through baking. Melt butter gently and cook garlic low and slow to avoid bitterness. Toss wings immediately after baking with warm sauce to help cheese stick. Add ranch just before serving to keep it creamy and cold. For extra crispiness, broil wings 2-3 minutes after tossing in sauce, watching carefully to prevent burning. Store leftover wings in an airtight container separate from ranch for up to 3 days. Reheat in oven at 375°F for 8-10 minutes to regain crispiness.
