Ingredients

Scale
  • 1 lb (450g) chicken tenders or boneless skinless chicken breasts, cut into slider-sized pieces
  • 1 cup (120g) all-purpose flour (or almond flour for gluten-free)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 large egg, beaten
  • 1 cup (240ml) buffalo sauce (Frankโ€™s RedHot preferred)
  • Cooking spray or a light drizzle of olive oil for air frying
  • 2 cups (150g) shredded green cabbage
  • 1/2 cup (50g) shredded carrots
  • 1/4 cup (60ml) mayonnaise (use dairy-free mayo if preferred)
  • 1/4 cup (60g) crumbled blue cheese (Maytag recommended)
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Salt and pepper to taste
  • 12 slider buns or mini sandwich rolls, lightly toasted
  • Optional: sliced pickles or extra blue cheese for topping

Instructions

  1. Pat the chicken pieces dry with paper towels to help the coating stick.
  2. In one bowl, combine the flour, garlic powder, smoked paprika, salt, and pepper.
  3. In another bowl, beat the egg.
  4. Dip each chicken piece into the beaten egg, letting excess drip off, then dredge thoroughly in the flour mixture. Set coated pieces on a plate without overcrowding.
  5. Preheat the air fryer to 400ยฐF (200ยฐC). Arrange chicken pieces in a single layer in the basket, leaving space between them. Lightly spray with cooking spray or drizzle olive oil.
  6. Air fry for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 165ยฐF / 74ยฐC). Add 2-3 extra minutes if needed for crispiness.
  7. Place cooked chicken in a large bowl and toss with buffalo sauce until evenly coated.
  8. In a mixing bowl, combine shredded cabbage, shredded carrots, mayonnaise, blue cheese crumbles, apple cider vinegar, and honey. Stir gently and season with salt and pepper.
  9. Slice and lightly toast the slider buns.
  10. Assemble sliders by layering buffalo chicken pieces and a generous spoonful of blue cheese slaw on each bun. Add pickles or extra blue cheese if desired.
  11. Serve immediately while chicken is crispy and slaw is cool and tangy.
