Discover five simple, homemade tricks to thicken creamy soups without using flour, using everyday ingredients like potatoes, cauliflower, cream cheese, and nut butters for a rich, velvety texture.

Ingredients

Scale
  • 2 cups Yukon Gold or Russet potatoes, peeled and chopped
  • 2 cups cauliflower, fresh or frozen, chopped
  • 4 ounces cream cheese, softened (full-fat or light)
  • ½ cup plain Greek yogurt, unsweetened (dairy-free alternative available)
  • 1 tablespoon nut butter (cashew or almond, unsweetened)
  • Pureed beans (cannellini or navy beans) as desired
  • 2 tablespoons unsalted butter, softened
  • 4 cups low-sodium vegetable or chicken broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Milk or cream (dairy or plant-based), as needed
  • Salt and pepper to taste

Instructions

  1. Peel and chop about 2 cups of potatoes and 2 cups of cauliflower into small, even pieces.
  2. In a soup pot, melt 2 tablespoons of unsalted butter over medium heat. Add 1 small chopped onion and 2 cloves minced garlic. Cook until translucent and fragrant, about 5 minutes.
  3. Add the chopped potatoes and cauliflower to the pot, then pour in 4 cups of low-sodium vegetable or chicken broth. Bring to a gentle boil, then reduce to a simmer. Cook for 15-20 minutes or until vegetables are tender.
  4. Carefully transfer half the soup with a slotted spoon to a blender or use an immersion blender directly in the pot. Blend until smooth and creamy. Return the puree to the pot and stir to combine.
  5. Stir in 4 ounces of softened cream cheese or ½ cup of plain Greek yogurt. Mix well on low heat, avoiding boiling to prevent curdling.
  6. If the soup is too thick, add a splash of milk or broth until desired consistency is reached. Season with salt and pepper to taste.
  7. For extra silkiness, swirl in 1 tablespoon of nut butter or pureed beans. Heat gently for 2 minutes, then remove from heat.

Notes

Avoid boiling after adding dairy-based thickeners like cream cheese or yogurt to prevent curdling. For a vegan version, substitute cream cheese with coconut cream and butter with olive oil. Puree enough vegetables to thicken but leave some texture if desired. Thickening bases can be prepared in advance and frozen in portions. Season after thickening to balance saltiness.
