  • 4 cups chicken broth (low sodium preferred)
  • 1.5 cups frozen or fresh corn
  • 4 ounces cream cheese, softened
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional garnishes: chopped cilantro, sliced jalapeños, lime juice

Instructions

  1. Rinse and pat dry the chicken breasts. Season both sides with salt, pepper, cumin, chili powder, and garlic powder. (5 minutes)
  2. Place the seasoned chicken breasts in the slow cooker. Add the drained white beans and chicken broth. Stir gently to combine. (5 minutes)
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and shreds easily.
  4. Shred the chicken directly in the slow cooker using two forks. (5 minutes)
  5. Stir in the corn and softened cream cheese until cream cheese melts and the mixture is creamy. Cover and cook on high for 20-30 minutes to warm the corn and meld flavors. (30 minutes)
  6. Taste and adjust seasoning with salt, pepper, or spices. Add diced jalapeño or cayenne for extra heat if desired. (2 minutes)
  7. Optional: If chili is thin, stir in 1 tablespoon cornstarch mixed with cold water and cook on high for 10 more minutes to thicken.

Notes

Add corn near the end of cooking to preserve sweetness and texture. Use softened cream cheese to avoid lumps. Season chicken before cooking for best flavor. Can be made in a Dutch oven on stovetop or oven if no slow cooker is available. Freeze leftovers for up to 3 months.
