Instructions

  2. Place a non-stick skillet over low heat and add 1 tablespoon of butter. Let it melt gently without browning or sizzling aggressively.
  3. Pour the beaten eggs into the pan. Let sit undisturbed for about 20 seconds until edges start to set. Gently push eggs from edges toward the center with a spatula, forming large soft curds. Repeat folding every 15-20 seconds, cooking low and slow.
