  • 34 medium roasted and peeled Hatch chilis
  • 1 ½ cups whole kernel corn (fresh, canned, or frozen)
  • 8 ounces cream cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • ½ cup crumbled queso fresco
  • 2 cloves garlic, minced
  • 3 stalks green onions, sliced thin
  • 2 tablespoons fresh cilantro, finely chopped (optional)
  • 1 tablespoon lime juice
  • ½ teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven broiler or grill. Place Hatch chilis and corn on a baking sheet. Roast for 10-12 minutes, turning occasionally until skins are blistered and slightly charred.
  2. Once cooled, peel skins off chilis, remove seeds if desired, and dice the flesh into small pieces.
  3. If using fresh corn, slice kernels off the cob. If canned or frozen, drain and pat dry.
  4. In a medium bowl, combine softened cream cheese, sour cream, and mayonnaise. Stir until smooth and creamy.
  5. Stir in minced garlic, ground cumin, lime juice, salt, and pepper.
  6. Fold in roasted Hatch chilis, corn kernels, sliced green onions, cilantro, and crumbled queso fresco gently.
  7. Taste and adjust salt, pepper, or lime juice as needed. Add a teaspoon or two of milk or lime juice if dip is too thick.
  8. Cover and refrigerate for at least 30 minutes to let flavors meld. Serve chilled or at room temperature with tortilla chips, pita wedges, or fresh veggies.

Notes

Roasting the chilis and corn is key to developing smoky flavor. Peeling chilis with a paper towel helps remove skins easily. If dip is too thick, add milk or lime juice to loosen. The dip can be made a day ahead for better flavor. For dairy-free, substitute cream cheese, sour cream, and mayo with plant-based alternatives and omit or replace queso fresco.
