  • 1/2 cup (120 ml) whole milk or milk alternative (almond, oat, or soy milk)
  • 1/4 cup (60 ml) heavy cream (use coconut cream for dairy-free)
  • 2 tablespoons (30 g) pumpkin puree, fresh or canned (unsweetened preferred)
  • 1 tablespoon (15 ml) maple syrup or honey, natural sweetener (adjust to taste)
  • 1 teaspoon pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • 1/2 teaspoon vanilla extract
  • Ice cubes as needed

Instructions

  1. Brew one shot (30 ml) of espresso or 1/2 cup (120 ml) of very strong coffee. Set aside to cool slightly (about 5 minutes).
  2. In a blender or with a handheld frother, combine 1/2 cup (120 ml) milk, 1/4 cup (60 ml) heavy cream, 2 tablespoons (30 g) pumpkin puree, 1 tablespoon (15 ml) maple syrup, 1 teaspoon pumpkin pie spice, and 1/2 teaspoon vanilla extract.
  3. Blend or froth on high speed for 20-30 seconds until the mixture becomes light, airy, and slightly thickened, forming a foam that holds its shape but still pours easily.
  4. Add ice cubes to a tall glass, then pour in the cooled espresso or coffee.
  5. Spoon or pour the pumpkin cold foam gently over the iced coffee to create a creamy, inviting layer on top.
  6. Optionally, sprinkle a pinch of pumpkin pie spice or cinnamon over the foam for extra flavor.
  7. Serve immediately. Stir gently if desired or enjoy the layered flavors as is.

Notes

Chill milk and cream before frothing for best foam texture. Let coffee cool to room temperature before adding foam to prevent melting. Adjust pumpkin pie spice and sweetener to taste. For dairy-free, use coconut cream and almond or oat milk. Leftover foam can be stored in an airtight container in the fridge up to 24 hours and re-frothed before use.
