  • 1 cup (240ml) milk (any kind; whole milk recommended)
  • 1/4 cup (64g) creamy peanut butter
  • 1 large ripe banana
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • 1 tablespoon (15ml) maple syrup or honey (optional, for extra sweetness)

Instructions

  1. Mash the banana: Peel the very ripe banana and mash it in a medium bowl with a fork until mostly smooth with a few small lumps.
  2. Add wet ingredients: To the mashed banana, add the milk, peanut butter, and maple syrup (if using). Whisk or stir until the peanut butter is fully incorporated.
  3. Add dry ingredients: Stir in the rolled oats, chia seeds, and salt. Mix until everything is evenly combined and all oats are coated.
  4. Transfer to jars: Divide the mixture evenly between 2-3 pint-sized mason jars or airtight containers, leaving about an inch of headspace.
  5. Refrigerate: Put the lids on tightly and refrigerate for at least 4 hours, preferably overnight. The oats will keep for up to 5 days.
  6. Serve: In the morning, stir the oats well. Add desired toppings (sliced banana, extra peanut butter, chopped peanuts, cinnamon, etc.) and enjoy cold or at room temperature.

Notes

Use rolled oats, not quick or steel-cut. Mash the banana well for even distribution. For best texture, let the oats sit overnight. If too thick in the morning, stir in a splash of milk. The flavor improves on day 2 and 3.
