  • 2 tablespoons (28 grams) unsalted butter, softened
  • 1/3 cup (30 grams) freshly grated Parmesan cheese
  • Salt, for pasta water and seasoning
  • Freshly ground black pepper, to taste
  • Optional: garlic powder or a small clove of minced garlic

Instructions

  1. Bring about 4 cups (1 liter) of water to a rolling boil in your pot. Add a generous pinch of salt (about 1 teaspoon). Toss in 2 ounces (56 grams) of dry spaghetti and cook according to package instructions, usually 8-10 minutes, until al dente. Stir occasionally to prevent sticking.
  2. Before draining, scoop out about 1/4 cup (60 ml) of pasta water and set it aside.
  3. Using a colander or slotted spoon, drain the pasta quickly but keep it hot. Don’t rinse.
  4. Return the hot pasta pot to the stove on low heat. Add 2 tablespoons (28 grams) of unsalted butter and let it melt slowly without browning.
  5. Stir in 1/3 cup (30 grams) of freshly grated Parmesan cheese into the melted butter. Stir gently until the cheese starts to melt.
  6. Add the drained spaghetti back into the pot. Pour in the reserved pasta water a little at a time while stirring vigorously to create a creamy sauce.
  7. Add freshly ground black pepper to taste, and a little extra salt if needed. If using garlic powder or minced garlic, stir it in now.
  8. Toss everything together until the pasta is glossy and coated in the sauce. Serve immediately on a warm plate.

Notes

Use freshly grated Parmesan for best melting and flavor. Reserve pasta water to achieve a silky sauce consistency. Melt butter on low heat to avoid burning. Add pasta water gradually to avoid a runny sauce. Let butter soften before melting to prevent clumping.
