Ingredients

Scale
  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 4 cups (960ml) low-sodium chicken broth
  • 2 cans (15 oz / 425g each) white beans (Great Northern or cannellini), drained and rinsed
  • 8 oz (226g) cream cheese, softened
  • 1 cup (150g) frozen corn
  • 2 cans (4 oz / 113g each) diced green chiles
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon mild chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of a 6-quart slow cooker. Add the diced onion and minced garlic on top.
  2. Pour in the chicken broth. Add the cumin, oregano, chili powder, salt, and pepper. Stir gently to combine.
  3. Add the drained and rinsed white beans, frozen corn, and undrained green chiles. Stir again.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. About 30 minutes before serving, remove the chicken breasts and shred with two forks. Return the shredded chicken to the pot.
  6. Cut the softened cream cheese into small cubes and add to the pot. Stir until completely melted and the chili is thick and creamy.
  7. Stir in the lime juice. Taste and adjust salt and pepper if needed.
  8. Ladle into bowls and garnish with fresh cilantro. Serve hot with optional toppings like shredded cheese, sour cream, or tortilla chips.

Notes

Don’t add the cream cheese too early or it may curdle. Use room temperature cream cheese for easier melting. For a thicker chili, mash some beans before adding cream cheese. This chili tastes even better the next day.
