This cozy white chocolate candy corn popcorn mix hits that perfect spot between a crunchy snack and a sweet treat. It’s a nostalgic fall snack that combines salty popcorn, sweet white chocolate, and chewy candy corn for an irresistible texture and flavor combo.

Ingredients

Scale
  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 12 ounces white chocolate chips (about 2 cups)
  • 1 cup candy corn
  • 1 teaspoon vegetable oil
  • Generous pinch flaky sea salt (like Maldon)
  • 1/2 cup salted peanuts (optional)
  • 1/2 cup pretzel pieces (optional)

Instructions

  1. Pop your popcorn: Pop 1/2 cup of kernels using your preferred method. If using microwave popcorn, pop two bags of the plain or lightly salted variety. Spread the popped popcorn on the baking sheet and let it cool completely. Pick out any unpopped kernels.
  2. Prepare your workspace: Line your baking sheet with parchment paper or a silicone mat. Have your candy corn and any optional add-ins measured and ready to go.
  3. Melt the white chocolate: Place the white chocolate chips and 1 teaspoon of vegetable oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly after each interval, until smooth and completely melted (about 1.5 to 2 minutes total). Alternatively, melt over low heat in a double boiler, stirring constantly.
  4. Combine the ingredients: Place the cooled popcorn and candy corn in your large mixing bowl. Pour the melted white chocolate over the top, and use your spatula to gently fold everything together, working from the bottom up. Do not overmix.
  5. Spread and season: Transfer the mixture to your prepared baking sheet and spread it into an even layer. While the chocolate is still wet, sprinkle the flaky sea salt evenly over the top. If adding peanuts or pretzels, press them into the mixture now.
  6. Let it set: Allow the popcorn mix to cool completely at room temperature for about 30-45 minutes until the chocolate is firm. For faster setting, refrigerate for 15-20 minutes.
  7. Break and serve: Once the chocolate has set, break the mixture into irregular clusters. Transfer to a serving bowl or store in an airtight container.

Notes

Make sure popcorn is completely cool before adding chocolate to prevent sogginess. White chocolate burns easily, so melt slowly in short intervals. For best texture, work in batches if doubling the recipe. Store in an airtight container at room temperature for up to one week. Do not refrigerate. To revive crunch, warm in a 250°F oven for 5 minutes and cool completely.
