  • 2 cups rolled oats (old-fashioned)
  • 1 cup pumpkin puree (100% pure pumpkin)
  • 3 cups milk (whole milk recommended, or 2%)
  • 1 cup water
  • ¼ cup maple syrup (or brown sugar)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 tablespoons butter (optional, or coconut oil for dairy-free)

Instructions

  1. Spray the slow cooker insert generously with nonstick cooking spray or grease with butter.
  2. In a large mixing bowl, whisk together milk, water, pumpkin puree, maple syrup, vanilla extract, and salt until smooth.
  3. Add rolled oats to the slow cooker, then pour the wet mixture over the top. Add pumpkin pie spice and cinnamon, and stir until well combined.
  4. Dot the top with butter if using.
  5. Cover and cook on LOW for 7-8 hours or on HIGH for 3-4 hours. For overnight oatmeal, use LOW.
  6. In the morning, stir the oatmeal. If too thick, add a splash of warm milk or water to reach desired consistency.
  7. Let rest for 5 minutes before serving.

Notes

For extra creaminess, stir in ¼ cup heavy cream or coconut cream before serving. If oatmeal is too thin, cook uncovered on LOW for 20-30 minutes. If too thick, stir in more milk. Do not open the lid during cooking. For a vegan version, use unsweetened oat milk or almond milk and coconut oil instead of butter.
