Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 6 cups) – a mix of Granny Smith and Honeycrisp recommended
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon lemon juice
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Make the salted caramel sauce: In a small saucepan over medium heat, melt 1/2 cup unsalted butter. Whisk in 1 cup packed brown sugar and 1/2 cup heavy cream. Bring to a gentle simmer, stirring constantly, and let bubble for 3-4 minutes until thickened slightly. Remove from heat and stir in 1 teaspoon vanilla extract and 1/2 teaspoon flaky sea salt. Set aside to cool slightly.
  3. Prepare the apple filling: Peel, core, and slice apples into 1/4-inch thick slices. In a large bowl, toss apple slices with 1/3 cup granulated sugar, 2 tablespoons all-purpose flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg (if using), and 1 tablespoon lemon juice until evenly coated. Spread apple mixture evenly in the prepared baking dish. Pour about half of the salted caramel sauce over the apples, reserving the rest for later.
  4. Make the oat crumble topping: In another large bowl, combine 1 cup old-fashioned rolled oats, 3/4 cup all-purpose flour, 1/2 cup packed brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Whisk together. Add cold butter cubes and use a pastry cutter, fork, or fingertips to work the butter into the dry ingredients until the mixture resembles coarse sand with pea-sized butter pieces.
  5. Assemble and bake: Sprinkle the oat crumble evenly over the apples. Do not press down. Bake for 35-40 minutes, until the topping is golden brown and the apple filling is bubbling around the edges. If the crumble browns too quickly, tent with foil for the last 10 minutes.
  6. Let the crisp cool on a wire rack for 10 minutes. Drizzle the remaining salted caramel sauce over the warm crisp right before serving.

Notes

Use a mix of tart and sweet apples (like Granny Smith and Honeycrisp) for best flavor. Keep butter cold for the crumble. Let the crisp rest for 10 minutes before serving to allow the filling to set. The caramel can burn quickly, so watch it carefully. Leftovers can be stored in the refrigerator for up to 4 days; reheat in the microwave or oven.
