Ingredients

Scale
  • 2 medium apples (Honeycrisp or Granny Smith), peeled, cored, and sliced ¼-inch thick
  • 2 tablespoons granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ⅓ cup old-fashioned rolled oats
  • ⅓ cup all-purpose flour
  • ¼ cup packed brown sugar (light or dark)
  • ¼ cup unsalted butter, cold and cut into small cubes
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • ¼ cup salted caramel sauce (store-bought or homemade)
  • Flaky sea salt (for sprinkling)

Instructions

  1. Preheat oven to 375°F (190°C). Position a rack in the center of the oven.
  2. Prep the apples: Peel, core, and slice apples into ¼-inch thick half-moon shapes.
  3. Make the filling: In a medium bowl, toss apple slices with granulated sugar, 1 tablespoon flour, lemon juice, ½ teaspoon cinnamon, and ¼ teaspoon salt. Let sit for 5 minutes.
  4. Make the crisp topping: In a small bowl, combine oats, ⅓ cup flour, brown sugar, ¼ teaspoon cinnamon, and a pinch of salt. Add cold butter cubes. Using a pastry cutter or fingertips, work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter bits remaining.
  5. Assemble the crisps: Divide apple mixture evenly between two 8-ounce ramekins. Press down gently. Drizzle 1 to 2 tablespoons of salted caramel sauce over each ramekin.
  6. Add the topping: Sprinkle oat mixture evenly over apples. Do not pack down. Place ramekins on a baking sheet.
  7. Bake for 25 to 30 minutes, until topping is golden brown and filling is bubbly around the edges. If topping browns too fast, tent loosely with foil for the last 5 minutes.
  8. Let crisps cool on a wire rack for 5 to 10 minutes. Drizzle with extra salted caramel sauce and sprinkle with flaky sea salt just before serving. Serve warm.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend and certified gluten-free oats. For dairy-free, swap butter with cold coconut oil or plant-based butter. Let the crisp rest for 5-10 minutes after baking to allow the filling to set. If you’re a topping lover, double the topping recipe.
