Ingredients

Scale
  • 1 pound ground beef (80/20 preferred)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chiles (like Rotel)
  • 1 can (15 ounces) fire-roasted diced tomatoes
  • 1 can (15 ounces) whole kernel corn, drained
  • 4 cups low-sodium beef broth
  • 1/2 cup heavy cream or sour cream (optional)
  • Salt and black pepper to taste

Instructions

  1. Brown the ground beef in a large Dutch oven or heavy-bottomed pot over medium-high heat, breaking it up with a spoon, until browned all over (6-8 minutes). Drain excess fat if needed, leaving a little for flavor.
  2. Reduce heat to medium. Add diced onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for 30 seconds to 1 minute, stirring constantly.
  3. Sprinkle ranch seasoning and taco seasoning over the beef and onion mixture. Stir and cook for about 1 minute to toast the spices.
  4. Add the diced tomatoes with green chiles, fire-roasted diced tomatoes, drained black beans, drained pinto beans, and drained corn. Stir well.
  5. Pour in the beef broth and stir, scraping up any browned bits from the bottom of the pot.
  6. Bring the soup to a gentle boil, then reduce heat to low. Simmer uncovered for 15-20 minutes, stirring occasionally.
  7. Turn off the heat. If using, stir in heavy cream or sour cream. Taste and adjust salt and pepper as needed.
  8. Ladle into bowls and serve with desired toppings.

Notes

For best flavor, use fire-roasted tomatoes and don’t skip toasting the seasonings. The soup thickens as it simmers; add more broth if needed. Leftovers taste even better the next day. For a thicker soup, mash some beans against the pot or stir in a cornstarch slurry.
