Ingredients

Scale
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120g) pumpkin puree
  • 3/4 cup (90g) all-purpose flour
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 oz (226g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two opposite sides. Lightly grease the parchment.
  2. In a large microwave-safe bowl, melt the butter in 30-second bursts. Let it cool for a minute.
  3. Whisk in the granulated sugar and brown sugar until well combined. Add the eggs one at a time, whisking well after each. Stir in the vanilla extract and pumpkin puree until smooth.
  4. In a separate small bowl, whisk together the flour, cocoa powder, pumpkin pie spice, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients. Fold gently with a rubber spatula until just combined. The batter will be thick and fudgy.
  6. In a medium bowl, beat the softened cream cheese with a hand mixer until smooth. Add the sugar and beat until combined. Mix in the egg yolk and vanilla extract until smooth.
  7. Pour the brownie batter into the prepared pan and spread evenly. Drop spoonfuls of the cream cheese mixture randomly over the top (about 8 to 10 dollops).
  8. Use a toothpick or skewer to drag through the cream cheese and brownie batter in a figure-eight pattern. Do not over-swirl.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. The edges should be set, and the center should still look slightly soft.
  10. Let the brownies cool in the pan on a wire rack for at least 30 minutes. Then, using the parchment overhang, lift them out and let them cool completely before slicing.

Notes

Don’t overmix the batter to keep brownies fudgy. Use room temperature ingredients for the cream cheese ribbon. Check for doneness at 30 minutes. Cool completely before slicing for clean cuts. Brownies taste even better the next day.
