Ingredients

Scale
  • 1 package (12 count) refrigerated cinnamon rolls with icing (recommend Pillsbury)
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/4 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 large eggs, room temperature
  • 1/2 cup whole milk or almond milk for dairy-free option
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the Cream Cheese Glaze:
  • 4 oz softened cream cheese (recommend Philadelphia brand)
  • 1 cup powdered sugar, sifted
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Open the cinnamon rolls package and cut each roll into quarters. Spread the pieces evenly in a single layer in the baking dish.
  3. In a medium bowl, whisk together pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, eggs, milk, vanilla extract, and salt until smooth.
  4. Pour the pumpkin mixture evenly over the cinnamon rolls. Gently press the rolls down with a spatula to soak up the custard.
  5. Let the casserole rest for about 10 minutes to absorb the liquid.
  6. Prepare the cream cheese glaze by beating together softened cream cheese, powdered sugar, 2 tablespoons milk, and vanilla extract until smooth. Add more milk if needed for desired consistency.
  7. Bake the casserole for 35–40 minutes until puffed and golden brown. If the top browns too quickly, loosely cover with foil halfway through baking.
  8. Remove from oven and let cool for 10 minutes.
  9. Drizzle the cream cheese glaze over the warm casserole and serve.

Notes

Cutting cinnamon rolls into quarters helps them absorb the pumpkin custard better. Letting the casserole rest before baking improves texture. Watch the oven closely to avoid burning; cover with foil if browning too fast. Soften cream cheese before making glaze to avoid lumps. Vanilla extract added last to glaze preserves aroma. Variations include vegan substitutions, adding nuts or fruit, and slow cooker method.
