This creamy, protein-packed overnight oats recipe is ready in just 5 minutes of prep and tastes like a cozy indulgence. Perfect for meal prep, it keeps you full until lunch with simple, wholesome ingredients.

Ingredients

  • Rolled oats, 1/2 cup (50g)
  • Milk of choice, 1/2 cup (120ml)
  • Greek yogurt, 1/4 cup (60g)
  • Chia seeds, 1 tablespoon (12g)
  • Honey or maple syrup, 1 tablespoon (15ml)
  • Vanilla extract, 1/2 teaspoon
  • Salt, a pinch
  • Creamy peanut butter, 2 tablespoons (32g)
  • Chocolate or vanilla protein powder, 1 scoop (about 30g)
  • Unsweetened cocoa powder, 1 tablespoon (5g) (optional, if using vanilla protein powder)
  • Sliced banana, 1/2 (optional topping)
  • Dark chocolate chips, 1 tablespoon (optional topping)
  • Chopped peanuts, 1 tablespoon (optional topping)
  • Extra peanut butter drizzle (optional topping)
  • Flaky sea salt (optional topping)

Instructions

  1. In your jar or container, add the rolled oats, chia seeds, and a pinch of salt. If using cocoa powder, add it here. Stir with a fork to distribute evenly.
  2. In a small bowl or liquid measuring cup, whisk together the milk, Greek yogurt, honey or maple syrup, and vanilla extract. Add the protein powder and whisk vigorously until completely smooth.
  3. Spoon the peanut butter into the wet mixture and whisk again. It’s okay if it doesn’t fully incorporate—little swirls are delightful. For fully mixed, microwave peanut butter for 10 seconds to soften first.
  4. Pour the wet mixture over the dry ingredients in the jar. Stir thoroughly, scraping the bottom and corners, until every oat is coated.
  5. Cover with a lid and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with desired toppings (banana, chocolate chips, peanuts, extra peanut butter, flaky sea salt). Serve cold or microwave for 45-60 seconds for a warm bowl.

Notes

For meal prep, make 4-5 jars at once and store without toppings for up to 5 days. Add toppings fresh each morning. If oats are too thick, stir in a tablespoon of milk at a time. If too thin, add extra chia seeds or reduce milk next time. Protein powder type affects texture: whey makes it lighter, plant-based makes it thicker. Do not skip the yogurt—it’s key for creaminess.
