This cozy overnight gingerbread French toast casserole is what happens when a stranger’s kitchen wisdom meets my obsession with make-ahead breakfasts. It’s got all the warm, spicy notes of gingerbread cookies, but it’s soft, custardy, and completely forgiving.

  • 1 loaf (about 16 ounces) day-old brioche or challah bread, cut into 1-inch cubes
  • 8 large eggs, room temperature
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup unsulphured molasses
  • 1/2 cup packed dark brown sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup packed dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cut into small cubes
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Take your day-old brioche or challah loaf and cut it into 1-inch cubes. Spread the cubes evenly in your greased 9×13-inch baking dish. If your bread is still a little fresh, toast the cubes in a 300ยฐF oven for 5-7 minutes to dry them out slightly.
  2. In your large mixing bowl, crack the 8 eggs and whisk them until fully combined and slightly frothy. Add the whole milk, heavy cream, molasses, brown sugar, vanilla extract, and all the spicesโ€”ginger, cinnamon, nutmeg, cloves, and salt. Whisk everything together until the brown sugar has mostly dissolved and the mixture is a uniform, dark caramel color.
  3. Pour the custard evenly over the bread cubes in the baking dish. Use a spatula to gently press the bread down, making sure every cube gets coated. Cover the dish tightly with plastic wrap and refrigerate for at least 8 hours, or up to 24 hours.
  4. The next morning, preheat your oven to 350ยฐF. While it’s heating, make the streusel. In a medium bowl, combine the flour, brown sugar, cinnamon, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until it resembles coarse crumbs. If you’re using nuts, stir them in now. Set the streusel aside in the fridge while the oven finishes preheating.
  5. Remove the casserole from the fridge and take off the plastic wrap. Sprinkle the streusel topping evenly over the surface. Bake for 45 to 50 minutes, or until the top is golden brown and the center is set. If the top is browning too quickly, tent it loosely with foil for the last 10-15 minutes.
  6. Let the casserole rest on a wire rack for about 10 minutes after it comes out of the oven. Serve warm, dusted with powdered sugar, and drizzled with maple syrup if desired.

Notes

Day-old brioche or challah is key for best texture. Don’t skip the overnight soakโ€”8 hours minimum, 12 is better. Room temperature eggs blend more smoothly. Grease the baking dish to prevent sticking. For dairy-free, use oat milk and coconut cream. For gluten-free, use gluten-free bread and flour blend.
