Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed if using links)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 9 ounces refrigerated cheese tortellini
  • 3 cups chopped kale (stems removed, leaves roughly torn)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving

Instructions

  1. Brown the sausage: Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the Italian sausage (remove casings if using links). Break it up with a wooden spoon and cook until nicely browned, about 5 to 7 minutes. Let it sit occasionally to develop color.
  2. Sautรฉ the aromatics: Add the diced onion to the pot. Cook for 3 to 4 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Build the broth: Pour in the chicken broth and the can of diced tomatoes (undrained). Add the Italian seasoning and red pepper flakes if using. Stir, scraping up any browned bits from the bottom. Bring to a boil, then reduce heat to medium-low and simmer for 5 minutes.
  4. Cook the tortellini: Add the refrigerated cheese tortellini to the simmering broth. Stir gently. Cook according to package directions, usually 3 to 5 minutes, until tender but still al dente.
  5. Add the kale: Toss in the chopped kale. Stir into the hot broth and cook until wilted, about 2 to 3 minutes. The kale should turn bright green and soften.
  6. Finish with cream and Parmesan: Reduce heat to low. Pour in the heavy cream and stir gently. Add the grated Parmesan cheese and stir until melted. Taste and season with salt and pepper. Warm through for 1 minute, but do not let it boil.
  7. Serve immediately: Ladle the soup into bowls. Top with extra Parmesan cheese and a crack of black pepper.

Notes

For best results, brown the sausage properly to develop flavor. Do not overcook the tortellini; they continue cooking in the hot broth. Let the cream come to room temperature before adding to prevent curdling. The soup tastes even better the next day, though the tortellini will be softer. For freezing, add tortellini and cream after thawing and reheating.
