A comforting, quick one-pot soup that captures the flavors of classic lasagna without the baking. Featuring tender noodles, rich tomato broth, and creamy swirls of ricotta cheese.

  • 1 pound lean ground beef or turkey
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon dried Italian seasoning
  • 2 tablespoons tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup broken lasagna noodles
  • 1 cup whole-milk ricotta cheese
  • Handful of fresh basil leaves, torn
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef or turkey, breaking it up with a wooden spoon, and cook until browned. Drain excess fat if necessary, leaving about a tablespoon.
  2. Reduce heat to medium. Add diced onion and cook until translucent. Add minced garlic and Italian seasoning, stirring constantly for one minute until fragrant.
  3. Stir in tomato paste and cook for one minute to deepen flavor. Pour in crushed tomatoes and broth, scraping up any browned bits from the bottom of the pot.
  4. Break lasagna noodles in half or thirds and add them to the boiling liquid. Reduce heat to a gentle simmer, cover partially, and cook for 15-20 minutes until noodles are tender, stirring occasionally.
  5. While noodles cook, mix ricotta cheese in a small bowl with a pinch of salt and a spoonful of hot soup broth to temper it.
  6. Once noodles are cooked, remove pot from heat. Stir in fresh basil. Ladle soup into bowls, dollop with tempered ricotta, and garnish with extra basil or Parmesan if desired.

Notes

Do not overcook the noodles as they will continue to absorb liquid. If making ahead, slightly undercook noodles or store soup and noodles separately. For freezing, freeze soup without ricotta; add fresh ricotta upon reheating. Can be made in a slow cooker by browning meat first, then cooking on low for 6-8 hours.
