A quick and comforting one-pot soup with smoky kielbasa, tender potatoes, and a creamy broth. Perfect for busy weeknights, this 30-minute recipe is hearty, satisfying, and made with simple ingredients.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced into half-moons
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups low-sodium chicken broth
  • 2 pounds Yukon Gold potatoes, peeled and cut into ¾-inch cubes
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ cup heavy cream
  • 2 tablespoons all-purpose flour
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Brown the kielbasa: Heat olive oil in a large pot over medium-high heat. Add sliced kielbasa in a single layer and cook undisturbed for 2-3 minutes until browned. Stir and cook another 2 minutes. Transfer to a plate using a slotted spoon.
  2. Sauté the aromatics: Reduce heat to medium. Add onion, carrots, and celery to the pot. Cook for about 3 minutes until onions are translucent. Add garlic and cook for 30 seconds until fragrant.
  3. Build the broth: Sprinkle flour over vegetables and stir constantly for 1 minute. Pour in ½ cup of chicken broth and scrape up browned bits from the bottom. Add remaining broth, potatoes, thyme, smoked paprika, salt, and pepper.
  4. Simmer the soup: Bring to a boil, then reduce heat to a gentle simmer. Add browned kielbasa back to the pot. Simmer uncovered for 12-15 minutes until potatoes are tender.
  5. Add the cream: Reduce heat to low. In a small bowl, whisk together heavy cream with ¼ cup of hot broth from the pot. Pour the cream mixture into the pot and stir gently. Warm through for about 2 minutes without boiling.
  6. Finish and serve: Taste and adjust seasoning. Ladle into bowls, garnish with fresh parsley if desired, and serve immediately with crusty bread.

Notes

For a gluten-free version, skip the flour and use a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) stirred in at the end. The soup tastes even better the next day as flavors meld. To prevent cream from curdling, temper it with hot broth before adding and keep heat low. For freezing, leave out the cream until reheating.
