Cozy One-Bowl Banana Bread (No Mixer Needed)

This easy one-bowl banana bread requires no mixer and delivers a perfectly moist, tender loaf every time. Inspired by a taxi driver’s grandmother’s method, it’s simple comfort food at its finest.

  • 3 ripe bananas, mashed (about 1 ½ cups or 340g)
  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (60g) chopped walnuts or pecans (optional)
  • ½ cup (90g) chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line with parchment paper leaving overhang on the sides.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps remaining.
  3. Add the melted butter (cooled slightly), granulated sugar, egg, and vanilla extract. Stir until well combined.
  4. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently just until no streaks of flour remain. Do not overmix.
  5. If using, gently fold in walnuts, pecans, or chocolate chips.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil for the last 15-20 minutes.
  8. Let cool in the pan for 10 minutes, then transfer to a cooling rack. Cool completely before slicing (about 1 hour).

Notes

For best results, use very ripe bananas with brown spots. Do not overmix the batter. Let the bread cool completely before slicing for clean cuts. Store at room temperature for up to 4 days or freeze for up to 3 months.
