  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes (about 3 cups)
  • 1 large red onion, cut into wedges
  • 2 cups broccoli florets (fresh or frozen)

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1/3 cup tahini (stir well before using)
  • 1/4 cup lemon juice (freshly squeezed preferred)
  • 1 small clove garlic, minced
  • 1/4 cup cold water, plus more as needed
  • 1 tablespoon maple syrup (or honey if not vegan)
  • 1/2 teaspoon salt
  • 1/4 cup toasted pumpkin seeds (pepitas)
  • 1/4 cup fresh parsley, chopped
  • Optional: crumbled feta cheese
  • Optional: pickled red onions

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or a silicone mat.
  2. Rinse the lentils in a fine-mesh strainer and let them drain well.
  3. In a large mixing bowl, combine the diced sweet potatoes, red onion wedges, broccoli florets, and rinsed lentils. Drizzle with olive oil, then sprinkle with cumin, smoked paprika, garlic powder, salt, and black pepper. Toss until everything is evenly coated.
  4. Spread the mixture in a single layer on the prepared sheet pan. Roast for 25 to 30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized, the broccoli is slightly charred, and the lentils are cooked through.
  5. While the vegetables roast, make the tahini sauce. In a small bowl, whisk together the tahini, lemon juice, minced garlic, maple syrup, and salt. The mixture will thicken. Slowly drizzle in the cold water while whisking continuously until the sauce is smooth and pourable, about the consistency of heavy cream. Adjust seasoning to taste.
  6. Divide the roasted lentil and vegetable mixture among four bowls. Drizzle generously with the creamy tahini sauce. Top with toasted pumpkin seeds, fresh parsley, and optional feta or pickled red onions. Serve immediately.

Notes

For best results, don’t skip rinsing the lentils. If the tahini sauce thickens after sitting, whisk in a splash of warm water. Toasting the pumpkin seeds in a dry skillet for 2-3 minutes enhances their flavor. The bowl can be customized with different vegetables or a soft-boiled egg for extra protein.
