Instructions

  1. Hot soak the beans: Place the dried navy beans in a large bowl and cover them with boiling water by about 2 inches. Let them sit for 1 hour while you prep the other ingredients. Drain and rinse before adding to the crockpot.
  2. Sauté the aromatics: Heat a large skillet over medium heat and add a tablespoon of olive oil or butter. Add the diced onion, carrots, and celery. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables have softened and the onion is translucent. Add the minced garlic and cook for another minute until fragrant.
  3. Transfer to the crockpot: Scrape the sautéed vegetables into the bottom of your slow cooker. Add the drained beans, ham bone, dried thyme, and bay leaves. Pour in the chicken broth and water. Give everything a gentle stir to combine.

Notes

Don’t skip the hot soak for the beans; it ensures even cooking. Brown the vegetables for deeper flavor. Add salt only at the end to avoid over-salting. The soup is even better the next day. For a thicker soup, mash some beans against the side of the crockpot.
