A quick and easy 5-minute overnight oats recipe that delivers a creamy, comforting breakfast. Made with simple ingredients like rolled oats, peanut butter, banana, and Greek yogurt, it’s perfect for busy mornings and tastes like a hug in a bowl.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 medium ripe banana, mashed (about ½ cup or 120g)
  • ¼ cup (64g) creamy peanut butter
  • 1 cup (240ml) milk (dairy, almond, oat, or coconut)
  • ½ cup (120g) plain Greek yogurt
  • 2 tablespoons (30ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon (5ml) vanilla extract
  • ⅛ teaspoon salt
  • Optional toppings: sliced banana, drizzle of peanut butter, chopped peanuts, cinnamon, dark chocolate chips

Instructions

  1. Mash the banana in a jar or small bowl with a fork until mostly smooth.
  2. Add the peanut butter, milk, Greek yogurt, maple syrup (if using), and vanilla extract to the mashed banana. Stir until well combined.
  3. Add the rolled oats, chia seeds, and salt. Stir until all oats are coated and submerged.
  4. Taste and adjust sweetness or peanut butter as desired.
  5. Seal the jar or container and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk.
  7. Add desired toppings and enjoy cold or warm (microwave for 45-60 seconds).

Notes

Use rolled oats for best texture. Don’t skip the salt—it enhances the peanut butter flavor. Mash banana thoroughly to avoid cold chunks. For a thicker consistency, add more chia seeds. For a thinner consistency, add extra milk in the morning. This recipe scales well for meal prep.
