A quick and easy 15-minute treat featuring fresh pumpkin seeds coated in a warm cinnamon sugar mixture and baked to golden, crunchy perfection. Perfect for cozy evenings and fall gatherings.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds, cleaned and dried
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 tablespoon light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract (optional but recommended)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Clean and dry your pumpkin seeds thoroughly. Rinse fresh seeds in a colander under cool water, removing any stringy pumpkin pulp. Spread them on a clean kitchen towel and pat them dry. Let them sit for about 10 minutes to air-dry completely.
  3. In a medium bowl, combine the melted butter, granulated sugar, brown sugar, cinnamon, and salt. Stir until well mixed. If using vanilla extract, add it now and stir again.
  4. Add the dried pumpkin seeds to the bowl and toss until they’re evenly coated. Use a spatula to work the mixture into every nook and cranny of the seeds.
  5. Line your baking sheet with parchment paper. Spread the coated seeds in a single, even layer, avoiding overlap.
  6. Bake for 12-15 minutes, stirring halfway through at the 7-minute mark. The seeds are done when they’re golden brown and fragrant, and the sugar coating looks slightly caramelized.
  7. Let them cool completely on the baking sheet for at least 15-20 minutes. The seeds will continue to crisp up as they cool.
  8. Once cooled, transfer to a bowl or airtight container. Break apart any clusters that formed during baking.

Notes

Make sure pumpkin seeds are completely dry before baking to avoid sogginess. Bake at 300°F (150°C) to prevent sugar from burning. Stir halfway through for even cooking. Let seeds cool completely for maximum crunch. Store in an airtight container at room temperature for up to 2 weeks. For a vegan version, substitute butter with coconut oil or vegan butter.
