Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch baking dish with butter or non-stick spray.
  2. In a large bowl, toss sliced peaches with brown sugar, cornstarch, vanilla extract, cinnamon, lemon juice, and a pinch of salt. Stir gently to coat evenly. Set aside.
  3. In a medium bowl, whisk together flour, brown sugar, baking powder, baking soda, and salt.
  4. Add cold, cubed butter to the flour mixture. Cut in butter using a pastry cutter or fingers until mixture resembles coarse crumbs with pea-sized bits.
  5. Pour in buttermilk and stir just until combined. Do not overmix.
  6. Pour peach mixture into prepared baking dish, spreading evenly.
