Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 6 tablespoons (85g) unsalted butter, browned
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120g) plain Greek yogurt (can substitute dairy-free yogurt)
  • 1 large apple, peeled, cored, and diced (Fuji or Honeycrisp recommended)
  • For the Maple Glaze:
  • 1 cup (120g) powdered sugar
  • 2 tablespoons pure maple syrup (Grade A recommended)
  • 12 tablespoons milk (any kind, adjust for desired consistency)

Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt 6 tablespoons (85g) of unsalted butter. Stir frequently as it foams and then begins to brown, about 5-7 minutes. Remove from heat and pour into a heatproof bowl to cool slightly.
  2. Preheat the oven to 350°F (175°C). Prepare an 8×8-inch (20×20 cm) baking pan by lining it with parchment paper or greasing it thoroughly.
  3. Mix dry ingredients: In a large bowl, whisk together 1 ½ cups (190g) all-purpose flour, 1 ½ teaspoons baking powder, 1 ½ teaspoons ground cinnamon, ½ teaspoon ground nutmeg, and ¼ teaspoon salt. Set aside.
  4. Combine wet ingredients: In a separate medium bowl, whisk the cooled browned butter with ¾ cup (150g) granulated sugar until smooth. Add 1 large room temperature egg and 1 teaspoon vanilla extract; whisk until combined. Stir in ½ cup (120g) Greek yogurt.
  5. Fold in dry ingredients: Gradually add the dry mixture into the wet ingredients, folding gently with a rubber spatula just until combined. Avoid overmixing.
  6. Add the apples: Fold in the diced apple. The batter will be slightly thick but moist.
  7. Transfer batter to pan: Scrape the batter evenly into your prepared pan and smooth the top with a spatula.
  8. Bake: Place the pan in the oven and bake for 30-35 minutes. Start checking at 30 minutes by inserting a toothpick into the center; it should come out with a few moist crumbs but no wet batter.
  9. Cool: Let the cake rest in the pan for 15 minutes, then transfer to a cooling rack to cool completely before glazing.
  10. Prepare the maple glaze: In a small bowl, whisk together 1 cup (120g) powdered sugar, 2 tablespoons pure maple syrup, and 1-2 tablespoons milk until smooth and pourable. Adjust thickness as needed.
  11. Glaze the cake: Drizzle the maple glaze evenly over the cooled cake. Let it set for 10-15 minutes before slicing.

Notes

Do not rush browning the butter; watch closely to avoid burning. Pat apples dry if very juicy to prevent watery batter. Avoid overmixing to keep cake tender. Let cake cool completely before glazing to prevent glaze from melting into the cake. Oven temperatures vary; start checking doneness at 30 minutes.
