These baked apple cider donuts are everything you want in a fall treat without the fuss of deep frying. They come together in under 30 minutes, with a concentrated apple cider flavor and a crunchy cinnamon sugar coating.

  • 1 ¾ cups (220 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • ¼ cup (50 g) light brown sugar, packed
  • 1 ½ teaspoons baking powder

  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 large egg, room temperature
  • ¼ cup (60 ml) vegetable oil
  • 1 teaspoon vanilla extract
  • ⅓ cup (80 ml) buttermilk
  • ¼ cup (60 g) unsalted butter, melted (for coating)
  • ½ cup (100 g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your donut pan with non-stick spray or melted butter.
  2. Reduce the apple cider: Pour 1 cup of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about ¼ cup, about 12-15 minutes. Set aside to cool slightly.
  3. Mix the dry ingredients: In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Combine the wet ingredients: In a separate medium bowl, whisk the egg until lightly beaten. Add vegetable oil, vanilla extract, buttermilk, and the cooled reduced apple cider. Whisk until smooth.
  5. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients. Fold gently with a rubber spatula until just combined—do not overmix. A few small lumps are fine.
  6. Fill the donut pan: Transfer batter to a piping bag or zip-top bag with the corner snipped off. Pipe batter into each donut cavity, filling about ⅔ full.
  7. Bake for 10-12 minutes, until golden brown and a toothpick inserted into the thickest part comes out clean. Let cool in the pan for 2-3 minutes.
  8. Prepare the coating: While donuts cool slightly, melt butter in a small bowl. In a separate shallow bowl, mix granulated sugar and cinnamon together.
  9. Coat the donuts: Working one at a time, brush each warm donut generously with melted butter on both sides. Immediately dip into the cinnamon sugar mixture, turning to coat evenly. Place on a cooling rack.
  10. Repeat with remaining donuts. If baking a second batch, let the pan cool completely before greasing and refilling.

Don’t skip reducing the cider—it concentrates the flavor and prevents soggy donuts. Coat donuts while warm for best sugar adherence. Watch baking time closely; start checking at 10 minutes. Grease the pan well to prevent sticking.
