Sweet, salty, crispy, and tenderโ€”these bacon-wrapped sweet potato bites with a sticky maple glaze are the perfect appetizer for any gathering. A tiny pinch of cayenne and a splash of apple cider vinegar balance the sweetness for an irresistible one-bite treat.

Ingredients

Scale
  • 2 medium sweet potatoes (about 1 pound total), peeled and cut into 1-inch cubes
  • 12 slices regular-cut bacon, cut in half crosswise
  • ยผ cup pure maple syrup
  • 1 tablespoon apple cider vinegar
  • โ…› teaspoon cayenne pepper (or more to taste)
  • Salt and black pepper to taste
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • 12–16 toothpicks, soaked in water for 10 minutes

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a rimmed baking sheet with parchment paper or foil. If using a wire rack, place it on the baking sheet now.
  2. Peel the sweet potatoes and cut them into 1-inch cubes. Try to make them as uniform as possible. You should get about 16-20 cubes total.
  3. Place the cubes in a bowl and toss with a drizzle of olive oil, a pinch of salt, and a few cracks of black pepper. Spread them in a single layer on your prepared baking sheet (or on the wire rack).
  4. Roast the sweet potatoes for 10 minutes. They should be just starting to soften but still hold their shape.
  5. While the sweet potatoes roast, whisk together the maple syrup, apple cider vinegar, and cayenne pepper in a small bowl. Set aside.
  6. Remove the sweet potatoes from the oven and let them cool slightly. Cut each bacon slice in half crosswise.
  7. Take a sweet potato cube and wrap a half-slice of bacon around it, overlapping the ends slightly. Secure with a soaked toothpick. Place the wrapped bite seam-side down on the baking sheet or wire rack. Repeat with all the cubes.
  8. Using a pastry brush or the back of a spoon, brush half of the maple glaze over the wrapped bites. Reserve the remaining glaze for later.
  9. Return the baking sheet to the oven and roast for 15 minutes. The bacon should be starting to brown and crisp, and the glaze will be bubbling.
  10. Carefully flip each bite using tongs. Brush with the remaining glaze. Roast for another 10-15 minutes, until the bacon is crispy and caramelized, and the sweet potato is fork-tender.
  11. Remove from the oven and immediately sprinkle with chopped fresh rosemary (if using).
  12. Let the bites rest on the baking sheet for 5 minutes before serving. Serve warm.

Notes

Don’t skip the pre-roast of sweet potatoesโ€”it ensures even cooking. Soak toothpicks in water for 10 minutes to prevent burning. If bacon browns too quickly, tent with foil. For extra crispy bacon, use a wire rack. Double the batch for parties as they disappear fast.
