A simple, customizable mimosa bar featuring apple cider and champagne, perfect for fall gatherings. Guests can create their own drinks with garnishes like cinnamon sticks, apple slices, and pomegranate seeds.

  • 1 bottle (750 ml) champagne or prosecco, chilled
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons honey or maple syrup (for rimming)
  • 1 apple (Honeycrisp or Granny Smith), thinly sliced into rounds
  • 46 whole cinnamon sticks
  • 46 small sprigs fresh rosemary
  • ½ cup pomegranate seeds (optional)
  • ¼ cup caramel sauce (optional)
  • Ice (optional)

Instructions

  1. Prepare the cinnamon-sugar rim: On a small plate, mix 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. Pour 2 tablespoons honey onto a separate plate. Dip each glass rim first into honey, then into cinnamon-sugar mix. Set aside to dry for 2-3 minutes.
  2. Slice the apples: Using a sharp knife, slice 1 apple into thin rounds, about ¼-inch thick. Remove seeds. If prepping ahead, toss slices in lemon juice to prevent browning.
  3. Prepare the garnish station: Arrange apple slices, cinnamon sticks, rosemary sprigs, and pomegranate seeds in separate small bowls. If using caramel sauce, pour into a small ramekin.
  4. Chill the cider and champagne: Ensure both are well-chilled. Pour apple cider into a pitcher or large measuring cup. Keep champagne in its bottle.
  5. Assemble the mimosa: Fill each glass halfway with apple cider. Top off with champagne, pouring slowly to preserve bubbles. Adjust ratio to taste (50/50 recommended).
  6. Add garnishes: Drop in a cinnamon stick, add 2-3 apple slices, sprinkle pomegranate seeds, and slide a rosemary sprig into the glass. Optionally drizzle caramel sauce inside the glass before pouring.
  7. Serve immediately: Mimosas are best enjoyed fresh. Place extra garnishes on the table for customization.

Notes

For a non-alcoholic version, use sparkling apple cider or ginger ale. For a spiced version, simmer apple cider with cinnamon, star anise, and cloves, then cool. For a caramel apple mimosa, drizzle caramel inside the glass and rim with crushed graham crackers mixed with cinnamon sugar. For a maple bourbon version, add 1 ounce bourbon per glass. Prep garnishes and rim glasses up to 2 hours ahead. Keep cider and champagne chilled. Serve immediately after pouring.
