  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • ¾ cup (180ml) fresh apple cider
  • ½ cup (120ml) sour cream or Greek yogurt
  • 1 teaspoon vanilla extract
  • ¼ cup (50g) granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)
  • 2 tablespoons unsalted butter, melted (for brushing topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch cake or bundt pan thoroughly, or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat softened butter with granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, mixing well after each addition.
  5. In a small bowl, whisk together apple cider, sour cream, and vanilla extract until smooth.
  6. Add dry ingredients to the butter mixture in three additions, alternating with the apple cider mixture in two additions, starting and ending with dry ingredients. Mix each addition just until incorporated.
  7. Pour batter into prepared pan and smooth the top gently with a spatula.
  8. Bake for 35-40 minutes, checking doneness with a toothpick inserted in the center; it should come out clean or with a few moist crumbs.
  9. Let cake cool in the pan for 10 minutes, then transfer to a cooling rack.
  10. While warm, brush the top with melted butter and sprinkle evenly with cinnamon sugar mixture.
  11. Allow cake to cool completely so the topping sets, about 20 minutes.
