  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter and 1 cup of granulated sugar on medium speed for 2-3 minutes until pale and fluffy.
  3. Add the pumpkin puree and eggs to the butter mixture. Beat on low speed just until combined, scraping down the sides of the bowl.
  4. In a separate medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or with a wooden spoon until just combined. Do not overmix.
  6. In a small bowl, mix the 1/2 cup granulated sugar with the cinnamon.
  7. Scoop tablespoon-sized balls of dough and roll them in the cinnamon sugar mixture until fully coated.
  8. Place dough balls on prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes. The edges should be set and lightly golden, but centers should look soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure butter is softened but not melted. Use pure pumpkin puree, not pie filling. For extra chewiness, do not overbake; pull cookies out when centers look slightly underdone. Store in an airtight container with a slice of bread to maintain softness.
